4 large pieces parchment paper
4 pieces tilapia
2 medium potatoes, thinly sliced (we use the mandolin)
1 link Spanish chorizo, diced
1 shallot, diced
2 cloves garlic, minced
Zest & juice of 1 lemon
1 head broccoli, chopped
1 small head cauliflower, chopped
Green olives, sliced (we used about 20, but we love olives)
Old Bay Seasoning (or seasoning of choice for fish)
4 Tbs butter, divided
2 lemons, halved
Preheat oven to 400* Place parchment paper on a cookie sheet
Drizzle a little oil on each piece of parchment.
Layer shallot, potato slices, veggies, olives, chorizo, fish, sprinkle w seasoning & lemon zest, then 1 Tbs butter & a little lemon juice (or white wine)
Fold & crease the parchment to seal it. Bake at 400* for 35 minutes.
Just before serving, heat a skillet on high heat. Place halved lemons cute side down & burn in dry pan until cut side is browned/caramelized.
Place each parchment packet on a plate. Cut open paper & squeeze burnt lemon over top.
