Gracie’s Favorite Skillet Cookies

We made a few modifications incl making these in cute little individual skillets we have  We make 4 cookies then either freeze the rest of the dough for another time or chill the dough & then bake regular cookies w it  

  • 3/4 cup butter
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 cup chocolate chips
  • 1/2 cup toffee bits (we use chopped up almond roca)
  • Ice cream for serving-we like butter pecan or caramel swirl
Preheat oven to 350*. Grease either individual or one large ovenproof skillet. 
In a small skillet, melt butter over medium heat. Stir occasionally & let butter foam & become lightly browned/smell toasty & nutty
Carefully pour browned butter into mixing bowl & let cool to room temp.
Combine the melted butter, brown sugar, and granulated sugar. Stir until smooth. Add the eggs and vanilla and mix until combined.
In a mixing bowl, whisk together flour, cornstarch, & baking soda.
Add the dry mixture to the wet mixture & stir well. Add chocolate chips & toffee pieces & stir well. Spread batter evenly in prepared cast iron skillet or individual skillets. 
Bake for 20 minutes or until golden brown. Don't over bake, you want the cookie to be slightly gooey. Remove from oven and let cool on a wire cooling rack for 10-15 minutes. Serve with ice cream, if desired.
