Gracie’s Goat Cheese Gnocchi

 A Gracie original 

1/2 shallot, diced

2 links sausage, dice (precooked variety)

3 cloves garlic, minced 

5 cups spinach, chopped

1/2 cup kalamata olives, chopped

1 lemon, zested & juiced

5 Oz goat cheese

1 package of gnocchi 

1/2 cup reserved gnocchi cooking liquid

1 Tbs pesto


Cook gnocchi per package directions. Drain & reserve 1/2 cup cooking liquid

Sauté shallots & sausage in skillet w a little oil. Once browned, add garlic & spinach. Sauté until spinach is wilted. 

Add goat cheese, lemon zest & juice, reserved cooking liquid, & pesto. Toss to combine. 

Stir in gnocchi & serve.
