Smoky Veggie & Ham Soup

 Definitely recommend serving w crunchy bread

1 small onion, chopped

1 large carrot, chopped

1 cup chopped ham steak (could omit for meatless Monday, but would add a Parmesan rind to add umami/salt)

3 cloves garlic, minced

1 tsp smoked paprika

1 tsp chili powder

1 tsp dried rosemary

1 Tbs tomato paste

1 14.5 oz can roasted diced tomatoes w juice

1 can chickpeas, undrained

1/2 cup lentils 

2 cups chicken (or veggie) broth

1 bunch kale, chopped

Grated Parmesan cheese, to top


Sauté onions & carrots in large stockpot w oil until onion begins to soften. Add ham (if using) through dried rosemary & sauté 3 min. Add tomato paste through broth & simmer for 20 minutes or until lentils & carrots are cooked through. Add kale & simmer another 5 minutes, adding broth or water as needed to your preferred soup consistency. 

Top w Parmesan cheese & serve w crusty bread
