Keith & Gracie make excellent fresh fettuccine, but this is good w any pasta you like
This also good w asparagus subbed for peas, or topped w grilled chicken or shrimp or sausages for extra protein
2 egg yolks
2 eggs
1 cup grated Parmesan cheese
6 slices bacon, diced
1 shallot, minced
Salt & pepper to taste
1 cup frozen peas
1 pound pasta of your choice
Parmesan cheese & black pepper to top
Whisk together eggs, cheese, salt, & pepper
Bring a large pot of water to boil (for pasta & peas)
Sauté bacon in a medium skillet until cooked through & move bacon to a plate , reserving 2 Tbs of drippings in skillet
Sauté shallot 2-3 minutes until softened, then add garlic for 1 min
Boil pasta until al dente, adding peas for last 30 seconds. Drain, reserving 1/2 cup of pasta water
Return pasta & peas to pot over medium heat work quickly to whisk hot pasta water & egg mixture into pasta & peas & cook 1-2 minutes, stirring constantly add skillet contents & bacon to pasta & stir well until thickened
Serve immediately w extra Parmesan cheese & cracked black pepper to taste
