This is pretty versatile. Could sub green beans for asparagus, add bacon bits, herbs of your choice. it’s good served hot or cold, as a side dish to grilled meat or as a main dish with an egg on top

1 bunch asparagus, cut into bite sized pieces
1 pound Yukon gold or red potatoes, peel on, cut into large chunks
Small bag fresh greens (baby spinach, arugula, mixed greens, etc)
1 bunch chives, chopped (we like to include the blossoms for both taste & bc they’re pretty)
1/4 cup parsley, chopped
Dressing:
1/4 cup olive oil
Juice & zest from 1 lemon
1 Tbs apple cider vinegar
1 tsp sugar
1 Tbs Dijon mustard
1 Tbs Mayo
1 clove garlic, minced
1tsp dried dill
Salt & pepper to taste
Boil potatoes in a big pot of salted water until tender -add asparagus for last 5 minutes of boiling. Drain
While potatoes are boiling, make dressing by whisking all ingredients together.
Place hot potatoes & asparagus in a large bowl & immediately toss w dressing
If serving hot, add the rest of the ingredients & serve
If serving cold, place bowl in fridge until cool & ready to serve, then add the rest of the ingredients just before serving.
We like this as a side to grilled pork, chicken, salmon, etc but it could also be a main course if topped with some hard boiled or poached eggs (hard boiled if served cold, poached if served hot)
