Mediterranean Asparagus Salad

 1bunch asparagus, chopped into bite sized pieces

1can chickpeas, drained & rinsed

Olive oil

1 cup cherry tomatoes, halved

1carrot, peeled & chopped

1/2 cup Kalamata olives, sliced

1/2 cup feta cheese, crumbled 


Dressing:

Juice of 1 lemon

3Tbs olive oil

1 Tbs Dijon mustard

2tsp dill

1 clove garlic, minced

1/2 tsp sugar

Salt & pepper to taste


Toss asparagus & chickpeas in some olive oil & roast at 400 degrees for 8-10 minutes

Toss in a large bowl w rest of salad ingredients

Whisk together dressing & dress salad


We like this served w grilled chicken or pork & some pita chips.
