Hokkien Mee

 12 Oz noodles (udon or bucatini are good)

3Tbs dark soy sauce

1Tbs soy sauce

1Tbs oyster sauce

1 Tbs brown sugar

2tsp corn starch

1cup water (from cooking noodles)

8 Oz pork belly, thinly sliced

6 Tbs minced garlic

8 Oz chicken, thinly sliced 

8 Oz shrimp

1 bunch broccoli rabe 

1 bunch baby bok choy 

Lime juice for serving


Cook noodles per package directions & drain, reserving 1 cup cooking liquid  whisk cornstarch into water

Mix dark soy sauce through sugar in a bowl

Fry pork belly in a large skillet or wok until crispy/fat rendered. Remove from pan & drain all but 1 Tbs of fat/oil from pan

Sauté chicken & garlic in skillet until cooked through. Remove from pan. 

Sauté shrimp & veggies in pan until softened/shrimp is cooked. Add pork belly, chicken, noodles, soy sauce mixture, and cornstarch slurry to pan, stir well & cook until heated through & sauce thickened

Serve w a squeeze of lime juice or hot sauce as desired.
