Sausage and Chard Pie

A hodge podge of a few different recipes and of what we had on hand~you could definitely swap out fillings:
hamburger, sharp cheddar, broccoli or ham, brie, spinach would be good

2 pie crusts

1 pound sausage
2 onions, halved and sliced
3 cloves garlic, minced
olive oil or butter (or both)
swiss chard (1 large bunch), washed and chopped
feta cheese, crumbled
3 eggs

Preheat oven to 375 degrees
Brown sausage in a large skillet.  Once done, drain if needed and add chard to pan.  Saute until wilted (if too dry/sticking to pan, add a 1/4 cup water or beer)  Remove from skillet into a large bowl

Caramelize onions and garlic in butter or olive oil over medium low heat for about 15 minutes (until soft and starting to turn golden)  Mix onion mixture with sausage mixture

Place bottom pie crust into a deep dish pie pan.  Sprinkle crust with feta cheese.  Top with sausage mixture.  Sprinkle feta over top.

Whisk 3 eggs together in bowl and pour evenly over pie fillings.
Top pie with second pie crust, crimp edges and cut small vent holes

Bake at 375 degrees for 45 minutes or until crust is brown and filling is bubbly
Let rest 5 minutes and serve
