Thai Spaghetti and Meatballs

We made this up~a combo of a lot of favorite recipes & food we needed to eat up in the fridge and freezer....measurements are by no means exact...

The Noodle Salad
2 packages Ramen noodles, cooked and drained (reserve one cup of cooking broth)
1 head of cabbage, thinly sliced
1 bunch of radishes, thinly sliced
a handful of cilantro, thai basil, and mint, chopped

The Meatballs
Prepackaged, frozen turkey meatballs, oven roasted per package directions

The Sauce
1 cup of Ramen cooking broth (water + seasoning packet from Ramen)
1 Tbs red curry paste
1 Tbs chili garlic sauce
juice of 2 limes
1Tbs fish sauce
1 Tbs peanut butter
2 Tbs soy sauce
1 tsp ginger

Mix together salad ingredients in a large bowl
Whisk together all of the dressing ingredients and add hot, cooked meatballs. Allow meatballs to marinade at least 30 minutes.
Serve salad with meatballs and dressing over top (meatballs are good hot or cold, your choice)
