Thai lettuce wraps

1 tsp grated fresh ginger (fine to substitute powdered ginger spice in a pinch)
1 Tbs red curry paste
1 Tbs chili garlic sauce
1 pound ground turkey
3 sliced green onions
1 bunch of radishes, sliced
2 Tbs chopped fresh mint
2 Tbs chopped fresh cilantro
optional:1 serrano chile, seeded and finely chopped (if you like spicy)
2 Tbs fish sauce
3 Tbs lime juice
1 Tbs brown sugar
1 tsp sesame oil
1/4 cup chopped dry roasted peanuts
8-10 large lettuce (or napa cabbage) leaves

Heat a large nonstick skillet over medium heat. Add ginger through ground turkey, stir, and cook 7 minutes or until turkey is done, stirring frequently. Drain turkey mixture; place in a large bowl. Add green onions, radishes, cilantro, & mint. In a separate bowl, whisk together chile (if using), fish sauce, lime juice, brown sugar, & sesame oil. Top meat mixture with dressing & serve on lettuce/cabbage leaves. Top with peanuts.
