Farm Box Egg Casserole

5 eggs, whisked
4 slices bacon
1 pound potatoes, chunked
1/2 pound greens, washed and diced
1 onion, diced
5 oz goat cheese
salt, pepper, crushed red pepper


Cook bacon in fry pan until nearly crispy. Remove from pan and drain most of fat. Saute onions and potatoes in a little bacon grease until potatoes are almost soft. Remove from pan. Saute greens until wilted and drain off any extra water from pan. Crumble bacon and mix with potatoes, onion, and greens.
Place mixture in a greased medium casserole dish. Sprinkle crumbled goat cheese over top.
Whisk eggs with seasonings of your choice (S&P, crushed red pepper, Italian seasoning, etc) and pour over casserole.
Cover and bake at 350 degrees for 30 minutes. Uncover and bake 10 more minutes or until eggs set and top browned.

Serve with a green salad to make you not feel guilty about the bacon, cheese, eggs, etc :)
