2 1/2 lbs zucchini;
1/2 lb feta cheese, crumbled (I used bleu this time);
2 garlic cloves (I used 4);
1 bunch of basil, stems removed (I left out for the bleu version);
3 eggs, beaten;
2 C heavy cream;
salt & pepper.
Thinly slice zucchini and steam for 5 minutes. Drain well and pat dry with a paper towel.
Place zucchini in a 9x12 gratin dish and season with salt and pepper. Sprinkle with the cheese (I layered it for more cheesy goodness in every bite).
In a food processer or blender, combine garlic and basil until finely chopped. Place in a large bowl and stir in eggs and cream until well blended. Pour over the zucchini.
Bake at 425F for 15 minutes, then reduce heat to 350 and cook 30 minutes longer, until golden on top.
Serves 6 or so. I haven't tried it with bacon in the bleu cheese version, but really...like that could taste anything but brilliant.
