- 4 Tbs olive oil
- 5 links cooked and thinly sliced Italian sausage
- 2 cups chopped onions
- 1 chopped fennel bulb
- 6 minced garlic cloves
- 2 tsp dried thyme
- 1 tsp red pepper flakes
- 3 Tbs sundried tomatoes
- 48 oz chicken broth
- 16 oz cheese tortellini
- 19 oz can drained white beans
- 60 oz spinach leaves
Heat oil in soup pot. Add sausage, onion, fennel, garlic, thyme, and red pepper - cook 10 minutes. Add chicken broth and tomatoes. Bring to a boil and add tortellini and beans. Boil until tortellini cooked. Add spinach and cook 3 minutes until wilted. Salt and pepper to taste and serve with crusty bread.
