Italian Sausage and Tortellini Soup

  • 4 Tbs olive oil
  • 5 links cooked and thinly sliced Italian sausage
  • 2 cups chopped onions
  • 1 chopped fennel bulb
  • 6 minced garlic cloves
  • 2 tsp dried thyme
  • 1 tsp red pepper flakes
  • 3 Tbs sundried tomatoes
  • 48 oz chicken broth
  • 16 oz cheese tortellini
  • 19 oz can drained white beans
  • 60 oz spinach leaves

Heat oil in soup pot. Add sausage, onion, fennel, garlic, thyme, and red pepper - cook 10 minutes. Add chicken broth and tomatoes. Bring to a boil and add tortellini and beans. Boil until tortellini cooked. Add spinach and cook 3 minutes until wilted. Salt and pepper to taste and serve with crusty bread.
