Minty Snap Peas

  • 1 1/2 # snap peas
  • 3 Tbs olive oil
  • 2 Tbs lemon juice
  • 6 Tbs mint leaves, chopped
  • salt & pepper
Cook snap peas for 2 minutes in boiling water. Drain & rinse in cold water to stop cooking.
Whisk together oil through salt & pepper & toss snap peas in dressing.
