Baked Salmon Cakes

  • 1 can (14.75 oz) red salmon, skin and bones removed
  • 1/4 cup breadcrumbs
  • 3 green onions, thinly sliced
  • 1 seeded and chopped jalapeno
  • 1 Tbs lime juice
  • 2 large eggs, lightly beaten
Cilantro sauce
  • 1/2 cup lowfat sour cream
  • 2 Tbs chopped cilantro
  • 1 tsp lime juice
  • 1/4 tsp sugar
  • 1/4 tsp salt
Heat oven to 350 degrees. Lightly coat baking sheet with cooking spray
Combine all salmon ingredients in a large bowl. Shape into 16 cakes
Place on baking sheet and bake 15 minutes.
Prepare cilantro sauce and refrigerate until ready to use.
