Unexpected Grain, Greens, & Fruit Salad

 We served this with marinated roasted pork loin. It’s loosely based on a couple of recipes:

Ingredients

  • 3 cups cooked & cooled Trader Joe’s Ancient Grains blend (1/2 bag). Original recipe called for farro, which would be good too 
  • 3 cups chopped power greens from Costco (or radicchio, spinach, kale, etc)
  • 1 Honeycrisp applethinly sliced
  • ½ cup finely chopped fresh parsley
  • ½ cup roasted pistachios 
  • 1/4 cup shaved parmesan cheese
  • 1/2 cup crumbled feta 
  • Dressing: whisk all ingredients together until emulsified. Best made at least one hour in advance. 
  • ¼ cup apple cider vinegar
  • 1 Tbs honey
  • 1 garlic clove, finely chopped 
  • Half shallot, finely chopped
  • 3 figs, finely chopped
  • ¼ teaspoon Dijon mustard
  • ¼ teaspoon sea salt
  • Freshly ground black pepper
  • ¼ cup extra-virgin olive oil

  • Freshly ground black pepper to top (or more Parmesan cheese)

Instructions

  • In a large bowl, place the grains, arugula, greens, apple, parsley, nuts, & cheese.
  • Add half the dressing and several grinds of pepper and toss to combine. Season to taste, adding more dressing as desired. Top with more cheese & black pepper as desired.
