We served this with marinated roasted pork loin. It’s loosely based on a couple of recipes:

Ingredients
- 3 cups cooked & cooled Trader Joe’s Ancient Grains blend (1/2 bag). Original recipe called for farro, which would be good too
- 3 cups chopped power greens from Costco (or radicchio, spinach, kale, etc)
- 1 Honeycrisp apple, thinly sliced
- ½ cup finely chopped fresh parsley
- ½ cup roasted pistachios
- 1/4 cup shaved parmesan cheese
- 1/2 cup crumbled feta
- Dressing: whisk all ingredients together until emulsified. Best made at least one hour in advance.
- ¼ cup apple cider vinegar
- 1 Tbs honey
- 1 garlic clove, finely chopped
- Half shallot, finely chopped
- 3 figs, finely chopped
- ¼ teaspoon Dijon mustard
- ¼ teaspoon sea salt
- Freshly ground black pepper
- ¼ cup extra-virgin olive oil
- Freshly ground black pepper to top (or more Parmesan cheese)
Instructions
- In a large bowl, place the grains, arugula, greens, apple, parsley, nuts, & cheese.
- Add half the dressing and several grinds of pepper and toss to combine. Season to taste, adding more dressing as desired. Top with more cheese & black pepper as desired.
