Lobster rolls will always be the gold standard, but when it’s not a special occasion, it’s fun to have a less expensive version for a summertime weeknight dinner
Makes 4-6 sandwiches
- 1/2 cup mayonnaise (we love kewpie)
- 1 tablespoon chopped parsley
- 1 teaspoon lemon juice
- 2 tsp Old Bay seasoning
- 1/4 cup finely chopped green onions
- 1/4 cup finely chopped celery
- Kosher salt and freshly cracked black pepper, to taste
- 1 pound seafood of choice (imitation crab meat, shrimp, crab, lobster, chopped into pieces)
- 4 to 6 sub rolls, buttered & grilled before serving
- Mix together all of the above ingredients. Refrigerate for at least 2 hours prior to serving. Grill rolls just prior to serving
