INGREDIENTS
- 2 tbsp extra virgin olive oil
- 1 yellow onion, finely diced
- 1 lb ground beef, 85% lean
- 1 cup mushrooms, sliced thin
- 2 cloves minced garlic
- 1/2 tsp each rosemary, thyme, sage
- 1btsp paprika
- 1 Tbs Worcestershire sauce
- 1 Tbs tomato paste
- 1/2 cup white wine
- 4 cups wide egg noodles, uncooked
- 4 cups beef broth
- 8 oz light sour cream
- 1/2 cup chopped fresh parsley
INSTRUCTIONS
- Heat a stockpot over medium-high heat with olive oil. Sauté mushrooms until they are browned (about 5 min). Remove mushroom to a bowl for later use.
- Add the onions and cook, stirring, for 2 to 3 minutes. Add the ground beef. Cook, breaking up the meat with the back of a spoon, until no longer pink, 5 to 7 minutes. Drain fat from pan
- Add the sautéed mushrooms, garlic, spices, worchestershire sauce, tomato paste & wine. cook, stirring, until liquids have mostly evaporated (3-4 minutes)
- Then, add the uncooked wide egg noodles and beef broth. Bring to a boil and stir well. Cover pot, reduce heat to low, and simmer x about 12 minutes (until noodles are soft), stirring occasionally.
- Remove pan from heat and stir in the sour cream. Taste and add more salt, if desired. Garnish with parsley & serve and enjoy!
