Selena & Chef Meatballs & Gnocchi

 A Gracie & Keith masterpiece-from the 1st season of the HBO show Selena & Chef

2# ground meat (chicken, beef, pork, or a mix)

1 tsp fennel seeds

1/4 dry white wine 

2 tsp salt & pepper

1/2 cup breadcrumbs

2 eggs

1 bunch parsley, chopped


2# potatoes-cooked to soft (either microwave, bake, or boil. Then mash (peeled) potatoes

1 egg

1/2 cup flour & enough to dust countertop

1 tsp salt

1 stick butter

2 Tbs olive oil

24 fresh sage leaves, cut in half

1 lemon, zested & juiced

1/2 cup grated Parmesan cheese


Preheat oven to 425 degrees

In a large mixing bowl, mix together meat through parsley to make meatball mixture  Use a small ice cream scoop to form small meatballs on a greased or parchment lined cookie sheet

Bake for 12 minutes

Bring a large pot of salted water to boil

Dust flour onto cutting board & dump out mashed potatoes  Add egg, flour, & salt & knead to a sticky dough  Roll dough onto thin logs & cut to form gnocchi

Boil gnocchi until they float then drain

Melt 1/2 stick butter & olive oil in a sauté pan  Add gnocchi & sauté until browned & crispy  Remove gnocchi from pan

Melt 1/2 stick butter in sauté pan until browned  Remove from heat & add sage, lemon zest & juice

Toss gnocchi & meatballs in lemon butter sauce

Serve w grated Parmesan cheese
