This is great with vanilla ice cream or whipped cream. I adjusted the recipe to make the topping almond flavored.
INGREDIENTS
For the filling:
- 2 1/2 pounds pitted fresh or frozen sweet cherries
- 1/2 cup (70 grams) granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch (use 1 1/2 tablespoons if using frozen cherries)
- 1/8 teaspoon kosher salt
For the topping:
- 2 cups (250 grams) all-purpose flour
- 2 teaspoons baking powder
- 1/4 cup (35 grams) granulated sugar, plus additional for sprinkling over top
- 1/2 teaspoon kosher salt
- 6 tablespoons (85 grams) unsalted butter cut into small pieces
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 tsp almond extract
