Calabacin de la Abuela (Roasted Zucchini)

1 pound zucchini, sliced into 1/4 inch rounds
1 yellow onion, thinly sliced
2 garlic cloves, minced
2 handfuls cherry tomatoes
2 large baking potatoes
1 Tbs Italian seasoning
1/2 tsp each salt and pepper
1 cup grated cheese (your choice~we like cheddar or pepper jack)

Bake the potatoes (microwaving works great since they'll crisp up a bit later in the oven)  Chop into bite sized cubes

Spray a large roasting pan with nonstick spray.
Layer:
Onions
Zucchini
Tomatoes
Garlic
Potatoes
Seasonings

Bake at 400 degrees for 10 minutes.  Sprinkle cheese over the top and bake for another 10 minutes until cheese is melted and bubbly (we like it when it starts to brown and crisp a bit.
