Not so much a recipe as a list of ingredients~I tend to just throw them all in a pot when we need a quick meal. Also a great cure for a head cold :)
2 cartons beef stock
3 cloves minced garlic
1 onion, sliced
2 carrots, very thinly sliced*
1 cup of snow peas, chopped*
1 Tbs red curry paste
Fish sauce
ginger
allspice
ground coriander
sriracha sauce
limes
cilantro
noodles of choice (wholewheat fettucine isn't authentic, but it's good)
hoisin sauce
finely sliced meat or seafood of choice (leftover chicken, steak, shrimp, BBQ pork etc)
*a bag of broccoli slaw works really well in place of these veggies too and is even faster
