- 1 Tbsp olive oil
- 2-3 pound pork loin
- 3 pounds yellow onions, sliced 1/4-inch thick, root to stem, about 6-8 cups sliced
- 1 Tbsp brown sugar, packed
- 2 bay leaves
- 2 teaspoons dried thyme
- 3 Tbsp Dijon mustard
- 1 bottle dark beer
- 1 cup chicken stock
- Freshly ground black pepper and salt
- 1 cup fat free greek yogurt
- 1 bag egg noodles or rice, cooked per package directions
Heat olive oil in dutch oven over medium high heat. Sear pork loin on all sides (may need to cut loin into sections so it will fit into pot) Remove pork to a bowl.
Cook onions and brown sugar in pan with browned pork bits over medium heat for 10-15 minutes until softened and beginning to brown.
Add bay leaves, thyme, mustard, beer, and chicken stock to pan and heat until simmering.
Add pork to pan, cover, and cook for 45 minutes over medium low heat
Remove lid and simmer for another 30-45 minutes until sauce is greatly reduced and pork is tender
Remove meat from pan and tent with foil until ready to serve
Allow sauce to cool slightly and add greek yogurt and salt and pepper to taste
Slice pork against the grain and serve with egg noodles/rice and sauce
Could garnish with a little parsley or chives to make it look prettier, but it tastes wonderful as is
