Fruit Breakfast Bake

Borrowed from my S-i-L Katie's recipe box~very good for brunches or potlucks.
We really like this with apple slices & apple pie seasoning, but the peaches are good too.
1 C brown sugar
1/2 C butter
2 T water
1 can drained peaches (or 6 peeled, sliced fresh peaches, pears, or apples)
1 tbs apple pie seasoning
5 eggs
1.5 C milk
1 T vanilla
cinnamon to sprinkle
1 loaf Italian or French bread, diced into small pieces

1. Combine sugar, butter & water and heat to boiling. Simmer 10 min stirring constantly. Pour into greased 9x13" pan and top with fruit & spices. Arrange bread on top.
2. Whisk eggs & milk & vanilla and pour over bread. Refrigerate overnight. Sprinkle with cinnamon and bake, covered, at 350 for 45 min. Uncover & bake for an additional 10 minutes. Let rest for 10 minutes & serve.
