This is easily a main course with some chopped chicken stirred in with the veggies.
1 medium onion, chopped
3 minced cloves garlic
2 tsp olive oil
1 1/2 cups uncooked orzo
3 cups chicken stock
1 cup white wine
8 oz jar sundried tomatoes in oil, drained & chopped
2 cups (1 head) chopped broccoli
2 oz shredded parmesan cheese
6 oz mascarpone cheese
handful chopped fresh parsley
Heat oil over medium high heat & saute garlic & onion until fragrant. Stir in orzo, chicken broth, and wine. Cook, uncovered, 14-16 minutes or until most of liquid is absorbed and orzo is tender.
Stir in tomatoes & broccoli. Remove from heat, cover, and let sit 5 minutes.
Add cheeses & stir well.
Serve with a sprinkle of parsley.
