Banana Oatmeal Mini Muffins

Great for little hands....and even yummier with chocolate chips, of course!

  • 1-½ cup Flour
  • 1 cup Rolled Oats
  • ½ cups Brown Sugar (unpacked)
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Soy Milk
  • ½ teaspoons Vanilla Extract
  • 3 whole Over-ripe Bananas

Preparation Instructions

Preheat oven to 400F (205C).

In a bowl, combine flour, oats, sugar, baking powder, soda, and salt. In another large bowl, mix together milk and vanilla. Add the mashed bananas, and combine thoroughly.

Stir the flour mixture into the banana mixture until just combined. Lightly grease and dust the mini muffin tins (I was able to make 36 mini muffins!).

Bake at 400F (205C) for 9 or 10 minutes.
