This is very basic baked chicken and rice~ultimate comfort food and very easy on the tummy. I'm sure you could dress it up with fancy wild rice, almonds, dried fruits, peas or other veggies,etc, but here is the original.
Mix:
1 1/4 cup raw regular rice
1 pkg dry onion soup mix
1 can cream of mushroom soup
same can filled with water
1 cup sliced mushrooms (or 1 can drained sliced mushrooms)
Spray Pam a 9x 13 pan and place 1 cut up chicken (or 3 cut up boneless skinless chicken breasts) in pan. Top with rice mixture.
Cover with foil and bake at 300 degrees for 2 hours (for bone in chicken) or 1 1/2 hours (for boneless chicken breasts)
