Apple & Fennel slaw

2 Tbs cider vinegar
1 Tbs olive oil
2 tsp sugar
salt and pepper
1 large fennel bulb, sliced
1 large apple, sliced
1/4 cup parsley
1/4 cup red onion slices

Whisk cider through pepper in a bowl until sugar is dissolved. Toss fennel, apple, parsley, and onion together and dress with dressing.
