3 Tbs butter
3 Tbs flour
3 cups milk
seasonings per taste: salt & pepper, always. Then can try Old Bay Seasoning, Cayenne, Garlic Salt, or seasoning salt.
Toppings per taste: corn, bacon, sliced green onions, clams, shredded cheese
Boil potatoes until tender, drain, and mash/whip until smooth.
Make a roux by melting butter in a pan. Whisk in flour slowly, cook for couple of minutes over medium heat. Slowly whisk in milk, stirring until thickened. Add potatoes and seasonings.
Set out toppings in bowls for people to top soup as desired.
