Make Do Borscht

This is a combo of a lot of borscht recipes I have. We get a lot of root veggies at the winter farm stand, so I just add whatever we have. That's why there aren't many quantity measures in this. Just use what you have.

Boil in 1 beer and water to cover: CUBED:
  • peeled potatoes
  • turnips
  • celeriac root
  • onions
Once soft, drain veggies & reserve liquid. Mash/food process veggies.

Boil in reserved liquid:
  • 1 shredded cabbage
  • shredded carrots
  • shredded beets
Cook until soft then add:
  • mashed veggies
  • lots of dill
  • 1 Tbs honey
  • 1/4 cup cider vinegar
  • salt & pepper to taste
Serve with sour cream (& sausage for Keith)
