- 12 oz uncooked penne
- 2 Tbs olive oil
- 4 cups green beans
- 2 garlic cloves, minced
- 2 Tbs Italian breadcrumbs
- 1/2 tsp salt
- 1/4 cup grated parmesan cheese
- 2 Tbs capers
- 1 tsp red wine vinegar
- 1/2 tsp black pepper
- 1/2 cup sundried tomatoes
Heat 1 Tbs oil in a large pan over medium high heat. Add green beans, cover and cook 3 minutes, stirring occasionally. Reduce heat to medium, add tomatoes and garlic, cover and cook 2 minutes. Stir in breadcrumbs and salt and saute 2 minutes. Stir in pasta, 1 Tbs oil, cheese, capers, vinegar, and pepper. Toss well.
