Bacon & Cheese Ziti

  • 3 cups uncooked ziti
  • 6 bacon slices, diced
  • 1 red pepper, cut into strips
  • 1/2 cup chopped onion
  • 5 cups baby spinach
  • 1 cup shredded fontina cheese
  • 1/2 cup gorgonzola cheese
  • dash olive oil
  • dash red pepper flakes
  • 1/4 cup toasted pine nuts
  • chopped green onions to garnish
Cook pasta & drain, reserving 1/4 cup cooking liquid.
Cook bacon, and remove bacon to drain, reserving 1 tbs drippings.
Saute onion and red pepper in drippings 5 minutes, add spinach and cook 1 minute.
Remove from heat and stir in pasta, reserved cooking liquid, bacon, & cheeses. Toss yuntil cheeses melt. Top with pine nuts & green onions.
